Time in a Bottle: Saison with Citrus Blossoms

As we may have mentioned before, time and patience are two of the core principles that guide us through production at Triple Crossing. Time in a Bottle, the latest release from our mixed culture cellar, showcases how deeply rooted those beliefs are.

In what has become a standard method for our mixed culture beers, Time in a Bottle began its journey with open fermentation in our coolship in early 2021, fermented entirely with our unique house culture. From there, it was transferred to red wine barrels where it resided for several months, allowing brett and bacteria to slowly impart nuanced funk and light acidity.

This beer presents similarly on the palate, with additional notes of orange San Pellegrino, orange blossom honey and a smarties-candy-like minerality. Complex, delicate, and contemplative. A nice beer to sit back and reflect on the passage of time. 5% ABV
