The Sum of its Parts Wild Ale
Might want to pack a lunch for this one… a whole lot of waxing poetic is forthcoming. As we march further into what we’ve internally called “our long game” (our hopefully obvious and intentional efforts to produce beer for grown-ups) is about to have its stake driven ever so firmly into the ground, maybe more than ever before.
Waxing Poetic returns, and it most certainly isn’t what you might remember it being, and while this is likely to cause at least some minor irritation and confusion, we stand firm in our continued effort to brew the beers we find interesting and compelling… revenue be damned.
This iteration of our once overly fruited and unfermented berliner style bares almost zero resemblance to the original. This beer is a full on, no boil, co-pitched with live lacto and yeast, bottled conditioned -NOT KETTLE SOURED- tart wheat beer.
Left intentionally “clean”, as in no fruit puree, lactose, sour gummy candy, sugary cereal or whatever… this classically inspired example shines all on its own via lactic derived lemon spritz tartness, fresh bread dough twang, and cleansing elevated carbonation. Featuring some seriously simple complexity, we hope you’ll take heed in what’s written here, and enjoy this beer for exactly what it is.
