We’re excited to announce our new location in Midlothian at Winterfield Crossing. We believe that in this community there are residents who have continually shown an increased demand for more engaging drinking and dining experiences. To that end, our intention with this location is to bring our purposefully chosen path of refinement to an area we feel is underserved.
Our new location will feature an elevated dining experience, designed by our in-house executive chef, and the on-site draft beer/canned offerings similar to our other two brewpubs. One of the more critical and exciting components of the project is that the brewing operations will be completely based on open fermentation, a process by which our carefully selected lager and ale yeast is allowed to ferment unencumbered by head pressure found in traditional unitanks or closed top vessels, thereby imparting a completely unique character to the beers. This brewery has been designed with a tight focus on both open fermentation and horizontal conditioning techniques that we otherwise have not yet been able to deep dive into.
The building itself, planned with JLL, Colliers, Perretz & Young Architects and the Blackwood Development Company, features a clean design of stone, glass and wood overlooking an expansive outdoor patio complete with awnings, fire-pits and walking paths. We look forward to bringing our beers across the river late 2021/early 2022. More details forthcoming.
